Carrot and Walnut Mini Bites With Zesty Yoghurt Dip

(makes 12)

Ingredients

For the bites

• 2 eggs

• 80ml light olive oil

• 75g maple syrup or runny honey

• Zest of 1 orange

• 2 medium carrots, grated

• 40g raisins or chopped dates

• 50g ground almonds

• 40g walnuts, roughly chopped

• 80g wholemeal spelt or oat flour

• 1 tsp baking powder

• ½ tsp cinnamon

• Pinch of ground ginger

For the yoghurt dip

• 150g thick Greek, coconut, or plant-based yoghurt

• 1 tbsp maple syrup

• Zest of ½ an orange

Method

• Preheat oven to 190°C (170°C fan).

• Lightly grease a mini muffin tin, or use paper cases.

• In a bowl, whisk the eggs, oil, maple syrup, and orange zest.

• Stir in the grated carrot, raisins, ground almonds, and walnuts.

• Sift the dry ingredients, then fold gently until combined.

• Spoon into the cases and bake for 18–20 minutes until golden and springy to the touch.

• While cooling, mix the yoghurt, maple syrup, and orange zest.

• Serve the bites with a generous spoonful of yoghurt dip, and a scatter of edible flowers or chopped walnuts, if you fancy.
